Die Bougros-Parzelle liegt am oberen Rand der Hanglage, Kalk-Ton-Böden, 34 Jahre alte Reben, Vergärung im grossen Holz, Ausbau im Barrique.
Helles Goldgelb; bezaubernde, komplexe Nase, reich ausgestattet mit kalkiger Mineralität, einem Hauch von cremiger, gelber Frucht und dezenten Holznoten. Grossartiger Auftakt auf der Zunge: kompakt, saftig, mit jugendlichen cremigem Schmelz, viel Fleisch hier, mollig und straff zugleich, von reifer und breit stützender und tragender Säure durchzogen. Exzellente Dichte und Tiefe, blitzsauber. Öffnet sich mit zunehmendem Luftkontakt. Der Einblick in den tief liegenden Kern dieses Grand Crus macht echt Freude. Passt wunderbar zu edlem Weichkäse oder zu Fischen wie Steinbutt oder Seezunge. Jetzt, am besten mit viel Luftkontakt, bis 2038.

The palate is well balanced, with a saline entry, fresh and vibrant, leading to a lightly spiced but persistent finish. I appreciate the way this Bougros fans out. Certainly one of the domaine’s best offerings this vintage. Superb."

The succulent, round and admirably concentrated larger-scaled flavors possess plenty of sappy dry extract that confers a seductive texture to the mid-palate that contrasts somewhat with the powerful, impressively long and youthfully austere finale. This imposing effort will definitely need at least a few years to develop more depth, but it should be worth the wait."

2019 Domaine Servin • Chablis Grand Cru Bougros
Scents of citrus oil, peach, honeycomb and flowers preface the 2019 Chablis Grand Cru Bougros, a full-bodied, layered and concentrated wine that's rich and satiny, with an ample core of fruit and a somewhat heady, oak-inflected finish. While it possesses plenty of weight and substance, it isn't my favorite grand cru bottling chez Servin this year. I suspect, however, that it will calm down with bottle age. 2025 - 2045

As I've written before, 30-hectare Domaine Servin, ably directed by François Servin and Australian-born winemaker Marc Cameron, continues to number among Chablis's addresses that are more under the radar. An emphasis on massale selections of Chardonnay, long élevage on the lees and an enviable palate of appellations are three of many reasons why these wines deserve to be taken seriously. The 2019 vintage here has turned out very well indeed, though two cuvées—the Bougros and the normally reference-point Butteaux—were a bit heavy-handedly oaky this year. This is a concentrated, serious vintage that retains a classically Chablisien profile despite the warmth of the vintage, and it's built to age with grace.
Die Domaine Servin ist ein typisches Familienweingut im Herzen des Chablis. Seit sieben Generationen in den Händen der gleichnamigen Familie. Die 35 Hektar Weinberge der Familie Servin befinden sich zu 98% auf der Appellation Chablis und zu 100% auf den einzigartigen Kimméridgien-Böden, die den mineralischen und typischen Chablis-Stil erst ermöglichen. Die Domaine besitzt Anteile in vielen Spitzenlagen. Im Premier-Cru-Bereich sind dies Montée de Tonnerre, Les Forêts, Butteaux, Mont de Milieu, Vaucoupin und natürlich Vaillons. Im Grand-Cru-Bereich sind es Blanchot, Les Clos, Les Preuses und Bougros. Die Reben sind im Schnitt gut 40 Jahre alt. Der Ausbau der Weine variiert ja nach Lage und Jahrgang. Nur wenige Grand Crus bekommen Holzkontakt, das meiste reift im Edelstahltank.
